

Use water at 95°C and a medium grind. Double your paper filter and place it atop your Chemex. Wash the filter with hot water, this is to get rid of the papery flavors that filters sometimes have and at the same time pre-heats the jar. Remember to dump out this water. Add 30g (per cup) of ground coffee to the center of your filter.


Add a little water to the coffee to make is moist and prepare the ground coffee for a good extraction. This should take about 30 seconds.
Every 30 seconds add 1’’ml of agua in a circular motion. You are finished when you have added 300ml of water for a cup of coffee. In total this should take you about 3 minutes on average.
Once the coffee has been filtered, check that the coffee looks uniform. This is an indication of how consistently your coffee dripped. If it is not uniform, it means that some parts may have been extracted more than others.
Your coffee is now ready to be served.
